- 12 oz. semi-sweet or dark chocolate chips
- 3/4 cup butter, softened
- 4 eggs
- 1 cup brown sugar
- 1/2 cup cocoa powder
- 1 teaspoon baking
- A pinch of sea salt
- 1/2 cup unsweetened shredded coconut
optional: 1 cup chocolate or butterscotch chips
Cooking Directions:
- Preheat the oven to 350F. Grease a 9×9 square pan.
- In the microwave, melt the chocolate and butter. Allow to cool.
- In a large bowl, whisk together the eggs and sugar until lightly and fluffy. Add the chocolate mixture and mix well. Sift the cocoa powder, baking soda and salt into the mixture and finally fold in the coconut until combined.
- Pour the mixture into the pan and bake for 30 minutes. The brownies should still be moist but should be set in the middle; if you stick a toothpick in, it won’t come out clean but it won’t have any raw batter on it. Allow the brownie to cool before transferring to a wire rack and cutting into pieces. Super fudgy texture and incredible flavor! Yum! And GLUTEN FREE!!!!!
