Here is something I can almost guarantee you haven’t tried yet and if you have, why didn’t you let me know sooner???
I had a brain storm about chocolate the other day (most of my most profound thoughts include chocolate).
Remember my No Bakes With A Twist recipe? If not, you can search for it under that title.
Well, my thought was to use the no bakes as the outsides of a homemade ice cream sandwich! Brilliant? I thought so, but after I tasted it, I KNEW so!
After making the no bakes and plopping them by spoonful on wax paper, I let them sit for a few minutes to cool and then smashed them relatively flat with the back end of a drinking glass. Once fully cooled, I placed one in each foil lined muffin tin cup. Then I took my cookie scoop and put a blob of ice cream on top of each no bake and then topped them with another no bake which I pushed down slightly into the ice cream.
Then I put them in the freezer until we were ready to eat them. Can I just say, amazing? It’s like fudge and ice cream meld to form one delicious eating experience. So rich and chewy and EASY. And they can be made completely gluten free if you use gluten free oats! They would be the perfect ending to your Fourth of July bbq!
