I love to bake. So if I’m gonna go for a no bake recipe, it better be pretty darn good! And these are really yummy! Plus they are gluten free and pack a punch of protein for energy and a little pick me up in the afternoon. (I made them without the flaxseed and chocolate chips and they are still fabulous!)
No Bake Energy Bites –
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed (optional)
1/2 cup mini chocolate chips (optional)
1 tsp vanilla
Mix. Roll in balls. Chill in fridge. Eat until you explode. Yep, they are really that good!
