Coconut.  It’s one of those things that you either love or hate.

Here’s a couple of simple things that I’ve done with coconut lately…

Coconut French Toast

I can’t take the credit for this one.  My friend Ann gave me this idea and I loved it so much that I will never make regular french toast again!  (At least for myself)

Dip your bread in the egg, milk mixture that you would normally use.  (I always add a little cinnamon and a couple of tablespoons of sugar).  But instead of spraying your griddle with Pam or using oil, spread butter on the griddle.  After dipping in the egg mixture, sprinkle coconut on both sides of the bread and place on griddle.  Cook on both sides until golden brown.  It will take a little longer than regular french toast, but is SOOOOOOOO worth the wait!  Eat it just like this or pour on a little of your favorite syrup.  If you love coconut, your life just changed for the better with this one.  Thanks, Ann!  xoxo

Peanut Butter Filled Pretzels Dipped in Chocolate and Coconut

This is pretty self explanatory.  I took peanut butter filled pretzels (you know, the little nuggets of deliciousness) and dipped them in a melted combination of semi-sweet chocolate chips and butterscotch chips then sprinkled them with flaked coconut.  Place on waxed paper and cool in fridge.  Salty, sweet, crunchy goodness!!!
