Summer is not the time to heat up the kitchen. Here’s a no bake recipe that is pretty much fool proof! More like fudge than cookies….(and gluten free!)…And yes, pretty much all of my cookie recipes include peanut butter 🙂
1 cup white Karo syrup
1 cup brown sugar
1 cup peanut butter
1 12 oz. pkg. chocolate chips
1 cup coconut
1 cup oats
1 cup Special K
In a metal mixing bowl, combine peanut butter, chocolate chips and coconut. Mix well. Set aside.
In a saucepan, combine Karo syrup with sugar and stir. Bring to boil and boil for one minute.
Pour the hot syrup over the peanut butter mixture and stir until well blended. Add 1 cup oats. Add one cup Special K.
Mix well. Spoon by tablespoons on wax paper. Voila! You’re done and you just made friends with whoever you share these with!
I think I can make these . . . just with a few adjustments. The “corn syrup” here is called “golden syrup” and it’s golden, and it’s weird, but better than nothing. And the coconut is all “dessicated” . . . like totally ground up and tiny, but it still tastes like coconut. Oh, and no Special K, but we have corn flakes. I’m gonna give it a spin . . .
