No lie…this is the best coffee cake I have ever tasted. Could be used as easily for dessert as for breakfast!
Cinnamon Spice Coffee Cake
1 1/2 cups boiling water
1 cup old fashioned oats
1 1/2 cups flour
1/2 tsp. salt
1 tsp. baking soda
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1 stick butter, softened
2 cups packed brown sugar
2 eggs
1 tsp. vanilla
Topping
1/2 cup butter
2 cups brown sugar
1 cup heavy cream
2 cups chopped pecans
2 cups sweetened flaked coconut
Preheat oven to 350 degrees. Mix all cake ingredients and put in prepared 9×13 pan. Bake for 25 minutes. Remove from oven and cool for an hour.
Preheat broiler. Mix all topping ingredients together. Spread over the cake. Broil cake for 3-4 minutes until bubbly and golden brown. Seriously, this puppy rocks!
