Tonight’s menu? Meatloaf, baby gold potatoes, green beans….
Meatloaf
2 lbs. lean ground beef
1 medium onion, chopped
1 sweet red pepper, chopped
1 egg
1/4 breadcrumb (I used cornflake crumbs – no gluten)
salt and pepper to taste
1/4 cup sweet chili sauce
Bake at 350 degrees for an hour. We’ll see if this works….some of these ingredients are things I added myself. 🙂
Baby Gold Potatoes
Cut baby Gold potatoes in half and put in microwaveable bowl. Cube 1/4 cup butter and put on top of potatoes. Add just a teeny bit of water. Salt and pepper to taste. Cover with Saran Wrap and put in microwave for 10 minutes. Pull out and stir. Put back in microwave for 10 more minutes. So easy – so good! (This is actually one of my own recipes…yes, I do have a few ideas of my own :-))
Green Beans
Heat olive oil in a frying pan. Add fresh green beans, washed and trimmed. Pour some soy sauce over the beans and cook on medium heat, turning every so. Add a little garlic and some sesame seeds. These cook fairly quickly, and you don’t want to overcook them. To determine if they’re done? Do the ol’ crunch test (don’t burn yourself!) and cook ’til the desired tenderness.
