Accountability is key, right? I actually think about what we’re going to have for dinner now because there are some of you out there who are actually using these recipes, too. So it makes me follow through on my “idea” to do more cooking this year. Here is today’s special. And as always, easy schmeasy….
Pulled Barbeque Chicken Sandwiches
12 boneless skinless chicken breast halves
1 medium sweet onion, finely chopped
1 can Coke (not diet)
1 – 16 oz bottle of bbq sauce
1/2 cup ketchup
3 Tbsp. apple cider vinegar
1/2 cup packed brown sugar
Salt and pepper to taste
Combine chicken and other ingredients in a crock pot and mix well. Cook for 8 hours on low. Remove chicken and shred with two forks. Serve on buns or rolls with additional sauce on the side. Great with cole slaw and baked beans.
