This yummy recipe is thanks to my friend Amy. I thought it sounded like the perfect dessert for a hot Fourth of July picnic. It’s supposed to just have strawberries, but I am adding blueberries, too, for the red, white and blue effect!
Red, White and Blue Cake (aka Strawberry Cake)
1 1/2 cubes of butter
3 cups of flour
1 Tbsp. baking powder
1 tsp. salt
2 cups plus 4 Tsp. sugar
2 large eggs
1 cup milk
2 tsp. vanilla
2 lbs. strawberries halved
1 lb. blueberries
Preheat oven to 350 degrees. Butter a 9×13 pan. Sift baking powder, flour and salt together. Put butter and two cups sugar in bowl and mix on medium high for three minutes until fluffy. Reduce speed to low and mix in eggs, milk and vanilla. Gradually mix in flour mixture. Transfer to 9×13 pan. Arrange berries on top of batter, cut sides down, as close together as possible. Sprinkle 4 Tbsp. sugar over berries. Bake cake for 10 minutes. Reduce oven to 325 degrees and bake until golden brown and firm to touch, about 1 hour. Let cool and enjoy with whipped cream and a strawberry/blueberry garnish on top!
