Baked Potato Potato Salad  – Another Pinterest Find

This recipe has spoiled me for any other potato salad, for two reasons:

1.  It’s SOOOOOOOOOOOOOOO yummy and different!  I don’t usually even really like potato salad, but this will forever be a new side at all of bbq gatherings.

2. It’s SOOOOOOOOOOOOOOO easy and quick to make!

So here’s your new favorite recipe –

2 small bags of baby potatoes (all prewashed and in-the-bag microwaveable)

1 cup sour cream

1/2 mayo

1/4 cup chopped chives

6 slices of bacon cooked (in the micro) and cut into pieces

1 cup grated cheddar cheese

I cooked the potatoes in the microwave in their bags – 4 1/2 minutes for each bag.  Then I took them out and put them in the fridge to cool (still in the bags).

While I was waiting for them to cool, I mixed together the sour cream and mayo and then added the cheese and chives.

I cooked the bacon in the microwave (make sure to cover with a paper towel) and then tore into pieces and added to the sour cream mixture.

Once the potatoes cooled, I cut them into fourths and added to sour cream mixture.  Then I garnished it with more shredded cheese and chives.

Easy, schmeasy, done.  And so ridiculously good!
