With the snow outside this morning, I just had to make some homemade cinnamon rolls today. And wow. Did the house ever smell good!
Seriously, these are really good. It makes a bit of a mess in the kitchen, but they are not difficult. And you can get a few projects done while you wait for them to rise! (Oh, wait, I was supposed to be still today, wasn’t I?) Make your taste buds smile this weekend. In honor of Colombus Day.
PURE BLISS CINNAMON ROLLS
2 pkgs active dry yeast
1 cup warm water
1 cup lukewarm milk
1 cup sugar
2/3 cup softened butter
2 tsp. salt
2 eggs
7-8 cups flour
Dissolve the yeast in the warm water. Stir in milk, sugar, butter, salt, eggs and half the flour. Beat until smooth. Mix in enough remaining flour to make dough easy to handle.
Turn dough onto floured surface and knead for about five minutes. Place in a buttered bowl. Cover and let rise in a warm place for an hour or so.
Roll dough into a big rectangle. Spread butter on to cover.
Filling –
Make desired amount of cinnamon sugar. I used 1 cup sugar mixed with 2 Tbsp. cinnamon. After combined, sprinkle over buttered rectangle. Roll up the dough into a long log. Cut into 1/2″ sections and place into buttered pans, allowing room for rising again. Then put in a warm place (covered) and let rise for another 40 minutes.
Bake at 375 for 20-25 minutes. DO NOT OVERBAKE!!! Your whole house will smell delish and cozy!
As soon as they come out of the oven, frost with cream cheese frosting and try to wait five minutes before eating so you don’t burn your tongue. Impossible to just eat one!
Cream Cheese Frosting
8 oz. cream cheese softened
1/2 cup butter softened
1 lb. powdered sugar
1 tsp vanilla
Enough milk to get to desired consistency…YUMMMMMMMMMMMMM!!!!
