My next door neighbor just gave birth to twins – Vivienne and Ethan! Welcome to our world and to our neighborhood, little ones!
To congratulate the family (mom, dad and big brother Christian) and to give them something to eat with the coffee that they are going to need to survive on for a while, I decided to try a new recipe for blueberry muffins. There are few things more soothing and comforting than a fresh, warm, blueberries-melted, muffin. And this recipe is an absolute winner!
TO DIE FOR BLUEBERRY MUFFINS
3 cups flour
1 1/2 cups sugar
1 tsp. salt
4 tsp. baking powder
2/3 cup vegetable oil
2 eggs
2/3 cup milk
3 cups fresh blueberries
Mix all of these ingredients except the blueberries. Once mixed well to a smooth consistency, fold in the blueberries. Pour into prepared muffin tins and set aside.
Next, mix together:
1 cup sugar
1/2 cup butter softened
1 Tbsp. cinnamon
Sprinkle over muffins.
Then bake at 400 degrees for 20 minutes. They smell incredible while they are baking! Just hoping I can get them out of the muffin tins. I may have filled them a little too full! Enjoy!
