Abby and I have been eating lots of salads lately. So I have been trying new recipes to shake up the new healthy habit a little bit….plus I hate cooking in 90 degree heat. All right, let’s be honest….I just hate cooking 🙂 (In fact, I cook up a bunch of chicken ahead all at once so that I can use it for all kinds of things throughout the week.)
So here’s our latest salad recipe:
BBQ Chicken Salad
2 skinless, boneless chicken breast halves
1 head red leaf lettuce, rinsed and torn
1 head green leaf lettuce, rinsed and torn
1 tomato – chopped
1 bunch cilantro – chopped
1 – 15 oz. can corn, drained
1 – 15 oz. can black beans, drained
1 – 2.8 oz. can french fried onions
1 cup grated cheddar cheese
1/2 cup ranch dressing
1/2 cup bbq sauce
Grill or bake chicken, cool and slice into strips. In a large bowl mix red and green lettuce, tomato, cilantro, corn, beans. Top with the grilled chicken slices, grated cheese and french fried onions.
In a small bowl, mix the ranch dressing and bbq sauce. Serve on the side as a dipping sauce, or toss with the salad to coat.
We are gonna try this tonight! Light, easy and hopefully delicious! (would be good paired with my corn muffin recipe posted earlier in my blog.)
