This was an experiment and it turned out luscious! And it’s low cal, low fat amazingness!
Start with an asian chicken….:-) hehe….
Here’s what I did –
1. I threw 3 frozen boneless, skinless chicken breasts into my crock pot.
2. I put in a bottle of Paul Newman’s Low Fat Sesame Ginger salad dressing.
3. I cooked that on low for about 7-8 hours.
4. Once cooked, I shredded the chicken with two forks and then placed it back in crock pot to soak in the dressing.
Next ingredients –
One package shredded cabbage
One can mandarin oranges (drained)
One can water chestnuts (drained)
Shredded carrots
Sweet chili sauce to taste
5. I mixed all of the ingredients in a large bowl, added the shredded chicken and then cut everything up with scissors in the bowl. Oh my gosh! So, so good! It fed three of us with enough for seconds. Light but really satisfying. A great dinner or lunch on a hot day!
