Yeah, I know. I haven’t posted recipes for a while. And yes, you’re right. I haven’t been cooking as much as I should. But tomorrow is Easter and requires some domesticity in the kitchen….sigh….
We are hosting, so others are helping bring different parts of the meal. Thank you, thank you! But here’s what’s cookin’ in the Jarvis kitchen today….
Cheesy Potatoes –
1/2 cup chopped onions
1 stick butter, melted
1 = 32 oz. package hashbrowns slightly thawed
1 can cream of chicken soup
1 – 8 oz. container sour cream
1 cup grated cheddar cheese
2 cups cornflakes, crushed
4 Tbsp. butter, melted
Preheat oven to 350 degrees. Brown onions in butter. Add hash browns and next three ingredients. Pour mixture into a greased 2 1/2 quart casserole dish. Combine cornflakes and butter. Sprinkle topping over hash browns. Bake for 30 minutes.
Coca Cola Cake
Cake –
1 cup Coca Cola
1/2 cup buttermilk
2 sticks butter softened
1 1/2 cups sugar (I used half brown)
2 large eggs
2 tsp. vanilla
2 cups flour
1/4 cup cocoa powder
1 tsp. baking soda
1 1/2 cups mini marshmallows
Frosting –
1 stick butter
1/2 cup Coca Cola
3 Tbsp. cocoa powder
1 – 16 oz. package powdered sugar
1 Tbsp. vanilla
Preheat oven to 350 degrees. Combine Coca Cola and buttermilk. Set aside. Beat butter until creamy. Beat in sugar until blended. Add eggs and vanilla until creamy. Add flour and Coca Cola mixture and mix just until blended. Fold in marshmallows. Pour batter into a 9×13 greased and floured pan and bake for 30-35 minutes. Let cool for 10 minutes
Frosting – Bring butter and next two ingredients to boil in a large saucepan over medium heat. Stir until butter melts. Remove from heat. Whisk in powdered sugar and vanilla. Pour frosting over warm cake. Cut into squares.
Key Lime Pie –
Crust –
1 1/4 cups graham cracker crumbs
1/3 cup sugar
1/2 cup butter, melted
Pie –
2 – 14 oz cans sweetened condensed milk
1 1/4 cups key lime juice
2 large eggs, slightly beaten
1/2 cup sour cream
2 Tbsp. powdered sugar
Lime slices for garnish
Preheat oven to 325. Combine cracker crumbs and next 2 ingredients. Press firmly into a 10-inch pie plate. Bake for 15 minutes or until lightly browned. Cool for 15 minutes. Whisk together milk and next 2 ingredients until well blended. Pour filling into crust. Bake for 18-20 minutes. Refrigerate for at least four hours.
Combine sour cream and powdered sugar. Spread over filling. Garnish with lime slices.
HAVE A WONDERFUL EASTER!!! P.S. – my dog brought half a dead bunny to the back door…apparently she heard about easter baskets and eggs and bunnies and such….had to break it to her that her find was not going to go in any baskets….
