Tonight’s dinner – (Easy, schmeasy…just how I like it!)

Fool Proof Beef Tenderloin

Whole beef tenderloin…(okay, scratch the beef tenderloin.  I just went to buy it and it was $16.99/lb.!  Not gonna happen.  So the butcher suggested a Ranchers Reserve Beef Loin Strip (boneless).  $5.99/lb.  That’s more like it! But now we are so far behind in time, that we are having fajitas tonight and will have this tomorrow :-))

Sea salt

Bring tenderloin to room temperature.  Preheat oven to 500 degrees for 15 minutes.  Sprinkle tenderloin with sea salt on all sides.  Place tenderloin on rack in roasting pan.  Fold thin end of tenderloin underneath so entire meat will have uniform thickness.  Roast for 2 1/2 minutes per pound.  After time goes off, turn oven off.  Leave roast in oven for 2 hours.  Do not open door for those two hours…

Accompaniments:

Twice Baked Potatoes

Wash and bake whole potatoes uncovered at 350 degrees for an hour.  Pull out of oven, split down the middle and scoop potato out of the skins.  Mash with milk, sour cream, butter and salt.  Whip til fairly smooth.  Scoop back into skins and sprinkle with grated cheese.  Put back in oven for about 10 minutes.  Yum!
