This is the way that our crazy busy day will end today…with a nice hot bowl of White Chili. Good for body and soul 🙂
White Chili
2 tsp. butter
1 1/2 c. chopped onion
1/2 c. sliced celery
1/2 c. chopped red pepper
1 Tbsp. minced, seeded jalapeno pepper
1 minced garlic clove
2 cups cooked chicken
3 cans Great Northern beans, rinsed and drained
2 – 14 1/2 oz. cans chicken broth
1 – 4 oz. can chopped green chilies, drained
1 – 15 oz. can cream-style corn
1 1/2 tsp. ground cumin
1 1/2 tsp. chili powder
1/2 tsp. salt
1/4 tsp. pepper
1 cup milk
1/2 cup chopped cilantro
shredded cheddar cheese for garnish
Melt butter over medium heat. Add onions and next 4 ingredients. Cook for 5 minutes. Add chicken 1 1/2 cup beans and next 7 ingredients. Bring to boil. Cover, reduce heat and simmer for 15 minutes. Mash remaining beans and mix with milk. Add to mixture. Then pour all into crockpot and cook on low until dinner time. Stir in cilantro. Garnish with cheese. Good stuff!!!!
p.s. be sure and wash your hands after you handle the jalapenos. I didn’t and then scratched my nostril (it was a scratch, not a pick!) and now my nose is stinging like fire!
