Okay, so we got together with two other couples and I was supposed to bring dessert. We were gonna watch Mercer Island’s Little League Team play against Salem in the regional championship game to go on to the Little League World Series. Very exciting. Especially since Mercer Island won and our friend’s brother is the coach. But personally, there was something else that was equally thrilling. I may have just made my best dessert so far…
My first thought was to make three berry shortcake. Always a summer hit. Still, just a little too simple. I needed something a bit more special and signature. Something fun and different than the expected. So, to be safe, I went ahead and made the shortcake and berry combo, and decided to also try something new.
I know that some of you are peanut butter fans. Which might just make me your favorite person in the world now. I think I might just have come up with possibly the best peanut butter pie ever. Am I bragging? No. Okay, well maybe a little…
But picture this…A sweet, buttery graham cracker crust. One of the best ways to start a pie. Follow this with a thick, creamy, rich peanut buttery layer, covered by a layer of dry, roasted peanuts. Now you have the perfect setting for what comes next. A combination of peanut butter, cream cheese, vanilla and whipped cream beat into an amazing texture of yummy goodness. Spread over the previous layers and put into the freezer to set.
What awaits you when you return to the freezer a couple hours later is a glorious Peanut BETTER Pie. Your tongue will sing, guaranteed. You won’t be able to stop smiling. And life will never quite be the same.
Oh, and speaking of peanuts and peanut butter…The results of my poll show that everyone in the world loves some kind of M and M, but peanut and peanut butter are the clear winners. Which makes the peanut butter pie that much more relevant and important 🙂
P.S. No the pie is neither gluten or dairy free….and yes I am paying the price now. And so worth it! 🙂
dude…just put a chocolate layer on top and i’m SO there. ok…i’m there anyway and expect to taste this wonderful creation sometime soon. but i’m just saying that chocolate and peanut butter together is one of God’s greatest creations!
